Caramel Apple Mini Cheesecakes

Hi everyone!! I can’t believe I’ve had my blog for 4 months now and this is my first food post! I love cooking and baking. It’s one of my favourite things to do. I got into baking in the 10th grade when I took a baking intro class. I learned the basics..you know, how to make a sponge cake, morning glory muffins and how to ration ingredients. I truly enjoyed it and well, not to brag, but I was really good at baking! Since then, and with the help of Pinterest, I love baking fun and delicious treats for my family and friends!

I can’t take total credit for this recipe. I found it on Pinterest from Cooking Classy and thought it would be fun to recreate and share it with you all! I served these at Thanksgiving last month and they were a huge hit! Picture an apple pie and a cheesecake combined topped with salted caramel sauce..helloooo! SOO GOOD! I included an easy printable recipe card at the bottom of the page for your convenice. I also took pictures of each process so you can all see what your mixed ingredients and final product should look like. I don’t know if it’s just me, but I love seeing videos and pictures of baking steps so I know if I’m making a mistake or not (you know when you’re baking something and they say ‘create a fine crumble’, but you don’t know exactly what that looks like..so you start to panic that maybe yours doesn’t look like how it should and you freak out that the recipe is all ruined?..just me? maybe? haha!) So without further ado, here is the recipe for caramel apple mini cheesecakes!! Enjoy!!!

Instructions
For the crust:
  1. Preheat oven to 325 degrees. In a mixing bowl, whisk together graham cracker crumbs, sugar and cinnamon. Pour in butter and using a fork, stir until evenly moistened (see photo above). Divide mixture among 18 paper lined muffin cups, adding a rounded tablespoon to each cup. Press into an even layer. Bake in preheated oven 5 minutes, then remove from oven and allow to cool.
For the streusel:
  1. In a bowl, toss chopped apples with lemon juice, set aside. In a mixing bowl, using an electric stand mixer (or electric hand mixer) set on medium-low speed, cream together cream cheese with sugar just until smooth. Mix in eggs one at a time, then blend in sour cream and vanilla.
To assemble cheesecakes:
  1. Divide cheesecake batter evenly among 18 muffin cups pouring filing over crust (3/4 full). Divide apples evenly over cheesecake layer, then finish by sprinkling a heaping tablespoon of the streusel over tops. Bake in preheated oven 23 - 25 minutes. Cool at room temperature 30 minutes, then transfer to fridge and chill 3 hours. Serve with salted caramel sauce on top.
